Almond Milk

Clean fresh Homemade Almond Milk has such an amazing taste and is so quick and easy to make using very few ingredients. We make it every few days to keep it fresh.

160 gms of raw almonds

1200 mls of filtered water

3 medjool dates (remove seed)

1/2 teaspoon of vanilla extract

Nut bag

Place almonds in a bowl and cover with some additional filtered water. I cover the bowl with a tea towel to stop anything foreign getting into the bowl while the almonds are soaking. I usually start soaking the almonds in the morning before I start work and then make the milk when I get home. About 4 hours is long enough if you would like to make it sooner.

Once the almonds are soaked you will need to strain the water off and rinse the almonds off in cold water. Place the almonds in a blender with the dates and the vanilla. Add the filtered water and blend for about 5 minutes. Water will go white and have a milk like appearance. The dates and the vanilla add a really nice flavour to the milk but it is not overpowering.

Pour blended milk into the nut bag over a large bowl to remove the nut pulp. Gently squeeze the bag to until all the liquid is in the bowl and you are only left with the pulp in the bag.

Pour milk from the bowl into suitable containers and refrigerate. I use small 500 ml glass bottles with a cap that I get freshly pressed juice in from our local market. The recipe usually fills two of these and it’s a great way to recycle. The milk will last for up to three days in the fridge.

Easy and quick to make and tastes delicious. We make a few different things from the left over almond pulp. Chocolate Brownies and protein balls, we will post these recipes later for you to enjoy.
