These delicious easy to make green eggs are packed full of nutrients and taste so good. The perfect way to start your weekend & chock full of vegetables. Feel free to add in your favourite vegetables and make it your own or add in a bit of MCT or super green’s to power it up. There are no rules here.
Green Eggs
Servings: 2 People
Ingredients
- 1 Handful Kale Chopped
- 1 Handful Chard Chopped
- 1 Handful Baby Spinach
- 1/2 Zuchinni Chopped
- 3 Brocollini Chopped
- 1 Spring Onion Chopped
- 1 Handful Parsley
- 4 Eggs
- 1 tbsp Grass Fed Butter
- 1 pinch Maldon Salt
- 1 pinch Black Pepper
Instructions
- Roughly Chop all the Vegetables
- Stir Fry all the Vegetables in Grass Fed Butter
- Break in the 4 eggs
- Mix through the eggs & vegetables
- Season well with the Salt & Pepper
- Plate up & Enjoy topped with Parsley or you could use Coriander or any Fresh Herbs
