Heathly Chicken Fajita’s

I had a craving for Mexican recently but wanted a healthier, Gluten Free version that was tasty and satisfying but with the flavour and feel of Mexico and came up with this. I added Forbidden black rice as it has a beautiful nutty flavour that works well in this recipe. As a bonus it is the type of rice that is richest in powerful disease-fighting antioxidants and also contains dietary fiber, anti-inflammatory properties and contains a good amount of Iron. I use Sweet Potato Wraps instead of Tortillas as they are Wheat and Gluten free with No added sugar and are only 95 calories per serve. They also are flexible enough to wrap easily around the other ingredients and not overpowering to the other flavours.

Ingredients

  • 1 Chicken Breast Cut into Strips
  • 1 Capsicum Cut into Strips
  • 1 Onion Cut into Strips
  • 1 Cup Forbidden Black Rice
  • 2 tbsp Sour Cream (Dairy or Non Dairy) Optional
  • 2 Sweet Potato Wraps

Marinade

  • 1/4 Cup Olive Oil
  • 1/2 tsp Cumin
  • 1/2 tsp Ground Coriander
  • 1/4 tsp Smoked Spanish Paprika
  • 1 pinch Dried Chilli
  • 1 Lemon Juiced

Salsa

  • 1 Large Tomato Diced
  • 1/4 Red Onion Diced
  • 1 Avocado Diced
  • 1 Splash Olive Oil
  • 1 Good Squeeze Lemon
  • 1 Handfull Fresh Coriander

Instructions

  • Combine all the Marinade ingredients in a large bowl. Add the Chicken Strips and marinade the for at least 30 mins.
    Cook the Black Rice – Add 1 Cup of Black rice to 2 Cups of Water / Stock and bring to the boil over a high heat. Once boiling, cover and turn down to low. Cook for 30 mins. Take off the lid and let sit for 10 mins before serving. 
    To make the Salsa. Dice the Tomato, Avocado and Onion and mix together with the Olive Oil, Lemon Juice and Coriander leaves. Add Salt and Pepper to taste.
    Cook the Chicken with the Capsicum and Onion on a grill or BBQ.
    Now to put it together – Heat a Sweet Potato Wrap on the Grill or BBQ. Add the Chicken / Capsicum Mix. Add some Black Rice. Top with Salsa & if tolerated add some Sour Cream. Wrap it up and Enjoy.

Notes

To make Vegetarian Omit the Chicken and Use Black Beans or Red Kidney Beans
The amount of Black Rice made will be more than required so keep in the fridge & add to Stir fries or Curries over the next couple of days. Also great for Fried Rice.
