Protein Balls

This is a great recipe to use up the Almond Pulp after making your Almond Milk. I don’t really measure anything out properly so have given a rough guide to what I use.

Ingredients

Dry Ingredients

1-2 cups of Almond Pulp (I like to dry mine out in the oven for about 1 hour in a very low oven).

1/4 – 1/2 cup of your favourite seeds. My favorites are;

 Pepitas

 Hemp Seeds

 Chia Seeds

 Flax Seeds

1-2 tbsps.Goji Berries

1-2 Tbsps. Cacoa Powder

1-2 Tbsps. Protein Powder

Wet Ingredients

1-2 Tbsps. MCT Oil

2 – 3 Tbsps. Coconut Ghee (Melted)

10 -15 pitted Medjool Dates

Coconut Water – enough to bind the mix together & make firm balls.

Shredded Coconut to roll.

Method

In a strong mixer blend together the dry ingredients until the consistency you like. Then add the Wet ingredients until it comes together, if too dry just add a little coconut water or juice.

Roll the mix into balls & coat with shredded coconut.
