Burrito Bowl with Refried Black Beans

A beautiful Mexican feast of Refried Black Beans, Rice, Salad & Jalapenos

Ingredients

  • 1 1/2 Onion's Chopped
  • 2 ripe Tomato Chopped
  • 1 400g Tin of Black Beans Drained & Rinsed
  • 1/2-1 tsp Cumin
  • 1/4 tsp Smoked Paprika
  • 1 Red Chilli Chopped
  • Salt & Pepper to Season
  • 1 Avocado Chopped
  • 1 250pkt Mexican Rice (Bens)
  • 1 Handful Mixed Lettuce
  • Jalepenos
  • Vegan Sour Cream (Tofutti)
  • Lemon Juice
  • Olive Oil

Instructions

Refried Black Beans

  • Saute 1 onion until soft
  • Add the Chilli, Cumin and Smoked paprika and fry off for 1 minute
  • Add the tin of rinsed Black Beans and Chopped Tomato
  • Cook until the tomato and beans start to collapse slightly
  • Season with Salt & Pepper

Salsa

  • Using the other chopped tomato & 1/2 Onion - mix together and add a splash of Olive Oil and lemon juice to taste
  • Season with Salt & Pepper

Burrito Bowl

  • In a bowl add in the lettuce, avocado, mexican rice, & black beans
  • Top with Salsa, Jalepenos & your choice of Sour Cream
  • Dig in & Enjoy
